Prosciutto, Arugula, Shallot Pizza

1/2 Basic Pizza Dough recipe (recipe makes 2 small pizzas)
1 large shallot, thinly sliced
shredded cheese - gouda, pizza blend, mozzarella, or whatever you want (but definitely use gouda!)
mozzarella balls
2-3 slices prosciutto (or as much as you want)
arugula
balsamic glaze
Directions
Make the pizza dough as directed.
Before assembling the pizza, saute the shallots in a little olive oil until lightly browned and cooked to desired tenderness.
To assemble:
- sprinkle a thin layer of cheese (mine: gouda and pizza blend)
- add prosciutto torn into bite sized pieces
- spread shallots
- add mozarella balls and more shredded cheese as desired (go for more gouda!)
Cook per dough directions - at 500 degrees for 10-12 minutes or until cheese is melted and crust is browned to your preference.
Remove the pizza from the oven and top with arugula, then drizzle balsamic glaze. Let cool for 5 minutes so you don't burn the inside of your mouth!
