Fluffy Cottage Cheese Pancakes

1 ripe banana (the riper, the better)
½ cup cottage cheese
2 eggs
½ cup oat flour (or blitz rolled oats in a blender)
½ tsp baking powder
½ tsp vanilla extract
A pinch of cinnamon (if you like warmth)
Pinch of salt
coconut oil, for frying
To top it off (optional but highly encouraged):
Sliced banana
Honey or maple syrup
Greek yogurt
Fresh berries
Directions
Mash your banana in a bowl until creamy. Stir in the cottage cheese, eggs, vanilla, and cinnamon. Add the oat flour, baking powder, and salt. The batter should be thick but spoonable.
Preheat a non-stick pan over medium-low heat. Add a little coconut oil, then spoon in the batter (about ¼ cup per pancake). Cook gently for 2–3 minutes until you see bubbles. Flip and cook another minute or two until golden and fluffy.
Layer your pancakes with whatever makes you happy - banana slices, a drizzle of honey, a dollop of yogurt, some berries, a handful of nuts… or all of the above.
