Maple Glazed Carrots

Ingredients

  • About half a dozen carrots, not too big or thick.

  • 1/4 cup maple syrup

  • 1/4 cup butter or ghee

  • Salt & pepper

  • cayenne pepper or another seasoning for heat

Directions

  1. Clean and peel carrots

  2. Cut diagonally back and forth to make “triangles”

  3. Boil carrots for 10min in shallow water at high temp.

  4. Remove carrots from water & allow them to dry. Dump water.

  5. Melt butter in now empty saucepan, and mix with maple syrup and seasoning. Toss carrots in mixture.

  6. Spread carrots out on baking dish. Put into the oven until softened, about 20-25 minutes.

  7. Finish with broiling for 2-4 minutes. There may excess moisture in the baking dish. Drain and serve.
