Maple Glazed Carrots

- About half a dozen carrots, not too big or thick. 
- 1/4 cup maple syrup 
- 1/4 cup butter or ghee 
- Salt & pepper 
- cayenne pepper or another seasoning for heat 
Directions
- Clean and peel carrots 
- Cut diagonally back and forth to make “triangles” 
- Boil carrots for 10min in shallow water at high temp. 
- Remove carrots from water & allow them to dry. Dump water. 
- Melt butter in now empty saucepan, and mix with maple syrup and seasoning. Toss carrots in mixture. 
- Spread carrots out on baking dish. Put into the oven until softened, about 20-25 minutes. 
- Finish with broiling for 2-4 minutes. There may excess moisture in the baking dish. Drain and serve.

Maybe try a beurre monte for finishing
