Random Pasta Salad

Ingredients

Half a box of any small/mid sized noodle (orecchiette, farfalle, etc.)

1/4 cup frozen peas

2 Persian cucumbers

1/3 cup chopped cherry tomatoes (sungold or variety for color and brightness)

1/4 red onion sliced very thin

1/2 cup roughly diced mozzarella balls

Basil leaves julienned

2 tablespoons olive oil

3 tablespoons balsamic vinegar

1 tablespoon honey

The juice of half a lime

1 teaspoon oregano

Half a teaspoon cayenne (omit if you don’t prefer spicy)

Salt and pepper to taste

Directions

Bring a pot of water to boil for the pasta, salt generously. Once boiling, add pasta and cook and till slightly more than al dente — pasta will harden as it cools in the fridge.

In a separate pan heated to medium, heat a tablespoon of butter and olive oil for the green peas. Once melted, add frozen peas and sauté lightly. Season with salt and pepper. Set aside to cool.

Meanwhile, cut and prep cucumbers, tomatoes, onions, and mozzarella and set aside.

In a separate container, mix together olive oil, balsamic, honey, lime juice, oregano, garlic powder, salt and pepper and tweak with any additional seasonings to make it to your liking!

Combine the dressing with the pasta and the salad ingredients and enjoy!

Notes

This is a whatever you have in the fridge type dish. Sub any veggies for veggies to your liking, probably would be great with some olives or pickled peppers if thats your vibe. Could also sub mozzarella cheese for feta cheese and make more of greek pasta salad. Could add corn. This dish is very random, so enjoy it with whatever you got!
