Directions
Begin by chopping your yellow onion and bell peppers into small pieces, and mince a few cloves of garlic.
In a large skillet over medium heat, drizzle in some olive oil and sauté the onions and bell peppers for about 5 minutes until they become soft.
Add the minced garlic and sliced Andouille sausage, cooking until the sausage is nicely browned and aromatic.
Stir in the fluffy jasmine rice along with the Cajun seasoning, allowing everything to cook together for about 1 minute.
Pour in the low-sodium chicken broth, bringing it to a gentle boil. Then reduce the heat to low, cover, and let it simmer for 15 minutes.
When the rice is ready, fold in the peeled and deveined shrimp. Cover again and cook for another 5-7 minutes until the shrimp are pink and opaque.
Remove the skillet from heat, let it sit for 5 minutes to settle, then fluff the rice gently with a fork.
