2 tbsp fresh coriander, finely chopped
1 tbsp mint, finely chopped
Zest and juice of of 1 lemon
1/2 tsp ground cumin
1 cucumber, peeled, halved lengthwise,
deseeded and finely chopped
Salt and black pepper
Directions
1 In a medium bowl, combine all of the ingredients.
2 Stir to blend and season to taste with salt and black pepper.
