Mexican street corn salad - esquites

Ingredients

-16 oz frozen white corn

-1 tsbp butter

-1/3 cup medium red onion sliced thinly

-1 diced jalapeno (optional)

-1/3 bunch of cilantro

-1/2 cup cotija cheese

Sauce

-2 tbsp mayo

-1/2 cup sour cream

-1 tsp cumin

-1 tsp chili powder

-1 tsp smoked paprika

-1/2 tsp garlic powder

-1 lime juiced

-salt and pepper to taste

Directions

Prep by chopping up onion, cilantro, jalapeno, and grate your cheese

Heat a frying pan on medium heat and add butter to melt. Add your frozen corn and fry until just heated through (about 3 minutes). Add salt and pepper to taste.

While corn is cooking, combine sauce ingredients and set aside.

Remove corn from heat and chill.

Once cooled down, add chopped veggies and sauce mix to combine.
