Ciabatta Sandwich Bread

360ml lukewarm water
7g instant yeast
30ml olive oil
450g bread flour
10g salt
Whisk the water & yeast and add the oil and whisk again. Add the flour and salt and mix really well till everything is combined.
Spread a bit of oil to your cling film or lid and cover and rest for 30 min.
After 30min do 4-6 stretch and folds and cover and rest for another 30 min.
After 30 min do another set of stretch and folds, stretch it out gently and roughly into a small rectangle cover and rest for an hour.
Grease your baking dish and add some parchment paper (greasing it stops the paper moving around when you put the dough in) generously flour the bottom of the dish.
Directions
Preheat oven to 230C and put a small dish with water inside (this is for steam)
Flour the top of the dough and Pour it out, hold it above the dish and let it come out, it may take a minute to come out, be patient. Using a floured dough scraper or a metal spatula push the sides in to create a thick rectangular shape (if it starts sticking when you’re doing this sprinkle some more flour) sprinkle a little more flour so the tea towel doesn’t stick, cover and rest for 30 min
Drizzle with olive oil and Bake for 10 min with water, turn oven down to 220C and bake 20 - 25 min. If the underside needs browning a bit you can Flip and bake for 3-5 min. ⚠️ the loaf will feel rock hard when you take it out but as it cools it become totally soft. I froze about half of mine which I’ll use for toast but you want to use it for bread just leave it out in an airtight bag or box to defrost overnight.
