Ingredients

6 large eggs

1 ½ cups heavy cream (or half-and-half for lighter option)

1 cup shredded Gruyère cheese (or Swiss/cheddar)

½ cup grated Parmesan cheese

1 cup cooked fillings (choose below)

½ cup diced onion or shallots

1 tbsp butter or olive oil

½ tsp salt

¼ tsp black pepper

Pinch of nutmeg (optional, but very Ina-style!)

Optional fillings:

Spinach (sautéed and drained)

Mushrooms (sautéed)

Cooked bacon or ham

Roasted vegetables (zucchini, peppers, etc.)

Directions

Preheat oven to 180°C (350°F).

Grease a 9-inch pie dish or baking dish.

Cook aromatics:

In a pan, sauté onions/shallots in butter until soft and lightly golden.

Prepare fillings:

Add your chosen veggies or meats and cook briefly. Remove from heat.

Whisk custard:

In a large bowl, whisk eggs, cream, salt, pepper, and nutmeg until smooth.

Assemble:

Spread the filling evenly in the dish. Sprinkle cheeses on top.

Pour egg mixture over everything.

Bake:

Bake for 35–40 minutes, until set in the center and lightly golden.

Cool slightly & serve:

Let rest for 5–10 minutes before slicing.
