Fried Olives

Ingredients

2 can Pitted Green Olives

4 ounce Pepper Jack Cheese

1 cup All-Purpose Flour

1 cup Panko Breadcrumbs

3 Egg

as needed Vegetable Oil

1 Lemon

Directions

Drain and rinse the Pitted Green Olives (2 cans). Shake excess water off.

Slice the Pepper Jack Cheese (4 oz) into small pieces sized to fit in the olives and stuff the olive with the cheese.

Make the breading station: add the All-Purpose Flour (1 cup) to one bowl, the whisked Egg (3) in another, and in a third bowl add the Panko Breadcrumbs (1 cup).

Lightly coat the olives in flour, then dip in the egg, then roll in the panko.

Add an inch of Vegetable Oil (as needed) to a pot and heat until a deep-fry thermometer reaches 350 degrees F (175 degrees C). Add the olives, around 10 at a time, and fry for 45-60 seconds or until golden brown.

Remove to paper towels to drain any excess oil.

When the olives are all fried, lightly season with salt and a squeeze of Lemon (1) juice.
