Ingredients

3 cups soy milk

1 star anise

½ medium sweet potato (peeled and diced into small pieces)

8 pitted dates

1 can coconut milk

1 tablespoon maple syrup (or sugar)

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon nutmeg

Tiny pinch of black salt (optional)

Directions

Start by washing and scrubbing the sweet potato. Dice sweet potato into small pieces

Place a large pot over medium heat, add almond milk, star anise, diced sweet potatoes, and dates. Bring to a boil, reduce heat to simmer for 5-7 minutes or until the sweet potatoes are tender.

Remove from the heat and cool slightly, discard the star anise.

Transfer the cooked sweet potatoes, almond milk dates, to the jug of a high-speed blender, add coconut milk, vanilla, cinnamon, nutmeg, and a pinch of black salt, and process until everything is well incorporated and you get a smooth consistency mixture.

Chill before serving. Pour it into serving glasses and garnish it with cinnamon. Enjoy!
