I have been making homemade pasta since I was in high school. I used to like to boil them in chicken broth and add a little butter when they were done. 🤌🏼 I also like to add them to my homemade chicken noodle soup.
Until now, I’ve used my hand crank pasta machine to make these. I recently got a pasta making attachment for my kitchen aid and it is AMAZING!! I have made my regular recipe for pasta as well as sourdough discard pasta with it. Both are equally delicious.
These are not low carb but I do have a keto egg noodle recipe on my page and in my new cookbook that is yummy and satisfies my pasta craving.
SOURDOUGH DISCARD PASTA INGREDIENTS:
250g bread flour
100g sourdough discard
2 eggs
NON-SOURDOUGH PASTA INGREDIENTS:
3 cups flour
4 eggs
1/4 cup water + more if needed
1/2 tsp salt
Directions
Mix ingredients together until combined. You may need to add more water into the non-sourdough recipe if your dough seems too dry. Just do a tablespoon at a time. Using a mixer with a dough hook is easiest for this step.
Next, knead the dough by hand on a lightly floured surface for 3-5 minutes.
Let the dough rest for 30 minutes.
Roll the dough out using a rolling pin and then cut into smaller pieces.
Roll the pieces through the flattening part of the pasta maker and then through the noodle part of the pasta maker. *I rolled my dough twice through the flattening part. First at the #8 setting and then at the #4 setting. If using a kitchen aid mixer attachment, turn the speed to #2 while rolling through the flattener and then to a #6-7 while rolling through the noodle cutter.
Hang the pasta to dry for 20 minutes.
Boil in salted water for 4-5 minutes.
Drain and then top with sauce of choice.
