Chicken Noodle Soup - “Steve’s Famous"

Ingredients

1 rotisserie chicken, chopped/shredded

3-4 stalks celery, chopped

3/4 lb chopped baby carrots (can vary - as much as you want)

1 sweet onion

1/4 cup butter

1 lb narrow Amish Homestyle noodles

10 - 12 cups chicken stock

1/2 teaspoon ground black pepper

2 bay leaves

1 Tbs dried parsley

Directions

1. In a large stock pot, saute celery and onion in butter or margarine until soft, approx 5 minutes.

2. Add chicken, carrots, chicken stock, black pepper, bay leaf, and parsley. Simmer for 30 minutes.

3. Return to a boil. Add noodles, and simmer for 10 more minutes.
