Harissa Chicken Salad

2 cups shredded rotisserie chicken
1 red bell pepper, chopped
1 cup chopped red onion (about ½ medium)
½ cup canned chickpeas, drained and rinsed (see Note)
½ cup 1-Minute Mayonnaise (page 195)
¼ cup harissa (I like Mina)
3 tablespoons chopped cilantro
1 teaspoon salt
1/4 cup sliced almonds
8 cups baby spinach
Directions
In a large bowl, combine the chicken, bell pepper, onion, chickpeas, mayon-naise, harissa, cilantro, and salt and stir to combine. Fold in the sliced almonds.
Divide the baby spinach among six plates and top each with a scoop of chicken salad.
