Chicken + Veggies Sheet Pan / Roasted Tray Meal

Ingredients

4 chicken breasts or thighs

1 zucchini, sliced

1 capsicum, sliced

1 red onion, wedge

1 cup cherry tomatoes

2 tbsp olive oil

1 tbsp dried Italian herbs (or mix oregano, basil, thyme)

Salt, pepper

Cooked brown rice / quinoa to serve

Directions

  1. Preheat oven 200°c

  2. Place chicken and vegetables on a baking tray

  3. Drizzle with olive oil, sprinkle herbs, salt & pepper. Toss to coat

  4. Roast 25-30min (or until chicken cooked and veggies tender)

  5. serve over rice / quinoa or divide into containers
