Sweet Potato & Black Bean Tacos

Ingredients

Mission street Taco flour Tortillas

1 sweet potato, cut into 1cm cubes

1 can black beans

1/2 onion diced

Mexican cheese

Serve with Avocado cilantro crema

Optional: 1 beano tablet

Directions

Preheat oven to 400 degrees and line a baking sheet with parchment paper.

While oven is preheating, cut onion and sweet potato. Toss sweet potato and onion with olive oil and salt and pepper. Pour out onto baking sheet. Once oven is preheated, place baking sheet in the oven and bake for 20 min.

At this time, I usually make the cilantro lime crema.

At the 20 minute mark, flip onions and sweet potato. Drain a can of black beans and add them to the sweet potato pan. Return to oven and bake for another 10 minutes.

After done baking, prepare the tacos. I like to heat oil in a pan and make mini quesadillas. One they are done, peel the two tortillas apart and you’ll have two super melty cheesy tortillas ready to go!
