Ingredients

1 1/4 cup (283 g) butter

1 cup water

2 Tablespoons cocoa powder

2 cup (400 g) sugar

2 cups gluten free all purpose flour*

1 teaspoon xanthan gum

1 teaspoon baking soda

1 teaspoon salt

1 cup sour cream

1 teaspoon gf vanilla

2 eggs, room temperature

Frosting:

1/2 cup (113 g) butter

1 Tablespoon cocoa powder

6 Tablespoons milk or buttermilk or dairy free

4 cups (500 g) powdered sugar

1 teaspoon gf vanilla

Directions

Preheat oven to 375 degrees. Melt butter in medium-sized saucepan. Add the water and cocoa and bring to a boil. Boil for 5 minutes, stirring to avoid burning. Remove pan from heat and pour mixture into mixing bowl. Then add sugar and mix with mixer whisk. Add other dry ingredients and mix. Quickly mix in sour cream and lightly beaten eggs. Use nonstick spray to spray large baking sheet with raised edges. Pour batter into pan and bake 375 for 20 minutes.

Frosting:

Rinse out saucepan and melt the butter. Add the cocoa and milk. Bring to a boil and remove from heat. Vigorously whisk in the powdered sugar and vanilla and blend until smooth.

After removing the cake from the oven, allow to cool on a rack for 20-30 minutes. Then pour warm frosting onto the warm cake. The cake needs to be warm for the frosting to spread but if it is too hot, the frosting melts.

Notes

This recipe works well with dairy free butter, sour cream, and almond milk.

*This recipe was written using Authentic Foods brand Multi blend gluten free four and works great!

Could it be made using Kats flour blend of 120 g tapioca starch, 60 g millet flour, and 60 g buckwheat flour? Kat weighs 1 cup flour at 120 g. Authentic Foods contains xanthan gum but this recipe adds additional but according to Kats rules, 1 tsp xanthan gum should be enough as recipe is written. (In fact her rules would only include 1/2 teaspoon xanthan gum.)

The recipe was originally written using 1/3 cup cocoa powder in cake and 6 Tablespoons cocoa in the frosting but Bonnie adjusted it to what is written above.
