Air Fryer Chicken Skewers

Ingredients

8 boneless/skinless springer mountain farms chicken thighs

1/2 tsp salt

1 1/2 tsp Cajun seasoning

1 tsp minced garlic

1/4 tsp onion powder

1/2 tsp garlic powder

1 tsp paprika

1/2 tsp black pepper

zest of 1 lemon

1 tbsp garlic olive oil ((or any olive oil) - use code 15GOLDENGK for 15% off)

8 skewers

1 stick of butter

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp paprika

3/4 tsp Cajun seasoning

1/2 tsp garlic powder

1/2 tbsp brown sugar

1 tbsp lemon juice

Directions

 If using wooden skewers, soak them in water for 30 minutes.

 Dice your chicken into even sized cubes and place them into a bowl.Â

Add all of the dried seasonings to the bowl along with garlic, lemon zest, and olive oil. Toss until the chicken is fully and evenly coated.

Skewer your chicken.

Place the chicken skewers into the air fryer, careful not to over stuff it. You don’t want them piled up on each other.

Allow the chicken skewers to cook at 400 °F for 18-20 minutes, flipping halfway through. They should be 165 °F when done.

While the chicken is cooking make your lemon butter sauce. Melt ⠓ of the butter and mix it with the lemon juice, brown sugar, and all of the dry seasonings. Add the remaining butter and use a fork to mash the mixture together. There should only be small lumps.

Once your chicken is done use a pastry or silicone brush to baste the lemon butter onto the chicken.Â
