Tzatziki Chicken Salad

Ingredients

4 cups cooked boneless skinless chicken breast (I use rotisserie chicken, chopped or shredded)

1 cup tzatziki

1/2 cup celery, diced

1/2 cup Persian cucumbers, diced

1/2 cup red bell pepper, diced

1/4 cup pepperoncinis (drained and chopped)

1/4 cup black olives, chopped

1/4 cup reduced fat feta cheese

2 tbsp fresh dill, chopped

Start by tasting your tzatziki and seeing if it needs any adjustments - more salt, pepper, lemon juice, herbs, garlic powder, etc. Make sure it tastes great since it is the base for the salad. Combine the chicken, celery, cucumbers, red bell pepper, pepperoncinis, olives, feta cheese, and dill in a bowl.

Add Tzatziki

Add the tzatziki over top and stir together. Season with salt and pepper as needed. Serve with pita bread, pita chips, over a salad, in a sandwich, etc.
