12 oz dry pasta (3 cups)
1 lb Italian sausage
2 cups fresh spinach
½ cup sun-dried tomatoes (optional)
3 cloves minced garlic
2 1/4 cups chicken broth
1 cup heavy cream
4 oz cream cheese OR 5.2 oz Boursin
½ cup grated Parmesan
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
1½ cups mozzarella
Directions
Preheat oven to 400°F.
Brown Italian sausage and drain excess grease.
Add uncooked pasta, sausage, tomatoes, and garlic to a greased 9×13.
Next add broth, cream, cream cheese or Boursin, Parmesan, and seasonings together. Pour over pasta and stir.
Make sure pasta is submerged as much as possible. Cover tightly with foil.
Bake 35–45 minutes, stirring halfway through if desired. Check that the pasta is tender. Add a little hot broth if needed.
Add spinach and top with mozzarella and bake uncovered another 5–10 minutes or until cheese melts and spinach wilts.
Rest 5–10 minutes to thicken. Top with red pepper flakes for a little kick. Enjoy.
You can still make this a true dump-and-bake after browning the sausage in an oven safe skillet. no need to boil the pasta separately! #easydinner #recipe #fyp
