Ingredients

Thank you @theconsciousplantkitchen for inspiring this recipe!

Dough:▪️1/2 Cup Mashed Banana (1 Large Banana)▪️3/4 Cup All Purpose Flour▪️1 tsp Baking Powder▪️1 Pinch Salt▪️1 Tbsp Olive Oil, for coating the sheet pan▪️

Glaze:▪️1/4 Cup Powdered Sugar▪️1 Tbsp Whole Milk, or milk of choice▪️1 Tiny Pinch Kosher Salt▪️

Directions

Preheat the oven to 350F convection (or 375F regular bake).

In a medium bowl, mash the banana with a fork until smooth then add the flour, baking powder, and salt. Stir with a spoon until you have a shaggy mass of dough, then knead in the bowl with your fingers until a dough ball forms and all flour is incorporated

Line a baking sheet with parchment paper and drizzle on the olive oil.

Use a cookie scoop to form balls about 1-inch wide (about 1 heaping Tbsp each; you should get 12 donut holes). Place them on the greased baking sheet and gently roll each one in the oil to coat and round them out. Bake for 10–12 mins, until golden brown.

Meanwhile, in a small bowl, whisk together the powdered sugar, milk, and salt until well combined.

Roll the donut holes in the glaze and place on a wire rack or plate. Let cool for about 5 mins so the glaze sets slightly, then enjoy while warm and fresh!
