Mary Me - Lemon Chicken Orzo

Ingredients:
1.5 lbs boneless, skinless chicken breast, cubed
2 tablespoons olive oil
4–5 cloves garlic, mashed
3/4 cup sun-dried tomatoes (in oil), drained
2 teaspoons Italian seasoning
2 teaspoons paprika
1/2 teaspoon kosher salt
1 teaspoon ground black pepper
1 cup orzo
2 3/4 cups chicken broth (or water)
3/4 cup full-fat coconut milk or heavy cream
2 large handfuls fresh spinach
3/4 cup freshly grated Parmesan cheese
Directions
1. Prep Ingredients:
Pat chicken dry and cut into bite-sized cubes.
2. Cook Chicken:
Heat olive oil in a large, deep skillet over medium-high heat.
Add chicken and sauté for 2–3 minutes until the edges begin to cook.
3. Add Flavorings:
Stir in mashed garlic, sun-dried tomatoes, Italian seasoning, paprika, salt, and pepper.
Cook for another 3–4 minutes, stirring occasionally.
4. Cook Orzo:
Add orzo and chicken broth (or water). Stir well and reduce heat to medium.
Cover and cook for 12 minutes, stirring occasionally to prevent sticking.
5. Finish Dish:
Stir in coconut milk or cream and fresh spinach.
Cook for 1 more minute, just until spinach wilts.
6. Add Cheese:
Turn off heat and stir in Parmesan until melted and creamy.
7. Serve:
Plate hot and enjoy!
