High-Protein Chipotle Mayo (Greek Yogurt Version)
Ingredients:
1/2 cup plain Greek yogurt (2% or nonfat; use thick, strained yogurt for best texture)
1 chipotle pepper in adobo sauce (or 1/2 for milder heat)
1 teaspoon adobo sauce
1 teaspoon lime juice
1 small garlic clove, minced or grated
Salt to taste
Optional Add-ins:
1 tablespoon olive oil or avocado oil (for a creamier texture and healthy fats)
1/4 teaspoon smoked paprika (if you want extra smokiness)
Directions
Instructions:
Blend all ingredients together in a small blender or food processor until smooth.
Or finely chop the chipotle and mix everything by hand.
Taste and adjust: Add more lime juice or a bit of honey if it’s too tangy.
Chill for 10–15 minutes to let flavors meld.
