Cajun Sausage and Vegetables

1 small bunch of mini potatoes

14 oz. Andouille sausage

1 zucchini

1 yellow squash

1 red bell pepper

1 red onion

2 Tbsp cooking oil, divided

1/2 tsp smoked paprika

1/4 tsp garlic powder

1/4 tsp cayenne pepper

1/4 tsp salt

1/4 tsp freshly cracked black pepper

1 package of white gravy (optional)


Slice your mini potatoes and cover them in oil. Put them onto the sheetpan and bake them for 15 minutes at 400 while you prep the other food.

Slice the zucchini, yellow squash, and sausage into half-rounds. Slice the red bell pepper and red onion into strips. Add all of the vegetables to a ziplock baggie with oil and all seasoning.

Pour out bag onto sheetpan with the potatoes and cook at 400 for 15 minutes, checking periodically to ensure you aren't overcooking. In the last 5 minutes switch to broil if you want them a little crispy.

(Optional: make white gravy according to directions on package.)
