Creamy Parmesan Chicken Gnocchi

Ingredients

2 ½ lbs Boneless Skinless Chicken Breast, Raw (1134g)

32 oz Potato Gnocchi (907g)

2 ½ Cups Chicken Broth (600mL)

4 tsp Minced Garlic (20g)

1 Medium Onion, Diced

4 Cups Baby Spinach (120g)

1 Block Reduced-Fat Cream Cheese (8 oz / 226g)

1 ½ Cups Grated Parmesan Cheese (150g)

2 tsp Italian Seasoning

1 tsp Salt

1 tsp Black Pepper

Directions

1.) Dice and season chicken, then cook in a skillet over medium-high heat for 6–8 minutes.

2.) Add onion and garlic and cook 2–3 minutes.

3.) Add broth and gnocchi, bring to a simmer, then cover and cook 6–8 minutes.

4.) Stir in cream cheese and parmesan until creamy, then add spinach until wilted.

5.) Divide into 7 servings and store or serve.
