One-Pot Chicken Parmesan Pasta

2 tbsp olive oil
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 tsp garlic powder
1 tsp onion powder
1/2 tsp red pepper flakes (optional)
Salt and pepper, to taste
2 cups marinara sauce
2 1/2 cups chicken broth
8 oz uncooked penne pasta
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh basil or parsley for garnish
Directions
Cook the Chicken:
Heat olive oil in a large pot over medium heat. Add the chicken pieces, garlic powder, onion powder, red pepper flakes, salt, and pepper. Cook the chicken until browned and cooked through, about 5-6 minutes.
Add Sauce and Pasta:
Stir in the marinara sauce and chicken broth. Bring the mixture to a simmer, then stir in the uncooked penne pasta.
Cook the Pasta:
Cover the pot and reduce the heat to medium-low. Let the pasta cook for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
Add Parmesan:
Stir in the grated Parmesan cheese until melted and combined with the pasta and chicken.
Top with Mozzarella:
Sprinkle the shredded mozzarella cheese evenly over the pasta. Cover and let the cheese melt for about 2-3 minutes.
Garnish and Serve:
Once the cheese is melted and bubbly, remove from heat. Garnish with fresh basil or parsley and serve hot.
