Chicken Enchilada Casserole

Ingredients

8 ounces sauteed chicken breast (cut into bite-sized pieces)

15 ounce can low-sodium black beans

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 1/2 cup Salsa

12 corn tortillas

1 1/2 cup shredded cheese

Directions

1. Preheat oven to 350°F. Coat 8x12 pan with cooking spray.

2. Mix together chicken, black beans, salt, and pepper.

3. Spread salsa on the bottom of the baking dish. Top with layer of 4 corn tortillas. Add layer of half of the chicken mixture, salsa, and cheese, followed by 4 more corn tortillas and repeat. Cover top with cheese and salsa.

4. Bake for 40 minutes. Cheese should be bubbling

5. Cut the casserole into equal pieces and serve.
