Juicy, Honey Dijon Rosemary Chicken Thighs. Made in the Air

Ingredients

1kg Chicken thighs

1 tsp Chicken stock powder

1 tsp Honey

1 tbsp Dijon mustard

1/2 tbsp Garlic, minced/paste

1 tbsp Lemon juice

1 tsp Fresh rosemary, finely chopped

1 Tbsp Olive/avocado oil

Honey Dijon glaze -

4 tbsp Butter

1/2 tsp Fresh rosemary, finely chopped

1/2 tsp Garlic,minced/paste

2 tsp Dijon mustard

4 tsp Honey

1 tsp Lemon juice

1 tbsp Water

Cracked black pepper, to taste

Garnish - Fresh chives, finely chopped

Directions

Method

Step 1 - In a small bowl, combine all the ingredients for the marinade. Mix well to combine.

Step 2 - Add the sauce to the chicken and mix well to coat. Marinate for at least 1 hour or in the refrigerator overnight.

Step 3 - Set your air fryer to 185c. Place the chicken thighs on the tray, skin side down. Cook for 25 minutes, turning half way through. Once the cooking cycle is complete, check the chicken is cooked through. Remove from the tray.

Step 4 - In a pan on low heat, add the butter. Once melted, add the rosemary and garlic, sauté for 1 minute, now add the remaining ingredients. Mix well to combine and remove from the heat.

Step 5 - Brush or pour the glaze over the chicken and serve with mashed potatoes and your favourite vegetables. Enjoy!
