Herb Chicken

4 chicken leg quarters
3 tablespoons tomato paste
2 tablespoons olive oil
2 tablespoons duck fat
4 cloves garlic, minced
2 tablespoons fresh herbs (such as rosemary, thyme, or oregano), chopped
1 teaspoon sumac
1 teaspoon turmeric
1 teaspoon salt
1/2 teaspoon black pepper
2 large onions, thinly sliced
1-2 lemons, thinly sliced
Directions
Preheat your oven to 375°F (190°C).
In a bowl, mix together tomato paste, olive oil, duck fat, minced garlic, fresh herbs, sumac, turmeric, salt, and black pepper to create a seasoning paste.
Place the chicken leg quarters in a large bowl and coat them evenly with the prepared seasoning paste.
In a baking pan, spread the thinly sliced onions and lemons on the bottom. Place the seasoned chicken leg quarters on top of them.
Bake uncovered in the preheated oven at 375°F for 25 minutes.
After 25 minutes, increase the oven temperature to 400°F (200°C) and continue baking for an additional 20 minutes or until the chicken is golden brown and cooked through.
Check the internal temperature of the chicken; it should reach at least 165°F (74°C).
Once done, let it rest for a few minutes and top with cilantro.
