Sheet Pan Egg + Egg Frittata (or Baked Eggs & Spinach)

Ingredients

8 eggs

1 cup milk (or milk + water)

1 cup spinach (fresh)

1 cup chopped vegetables (e.g capsicum, onion, mushroom, zucchini)

100g ham / lean bacon / cooked chicken (opt)

Salt, pepper, herbs (e.g parsley, oregano)

Directions

  1. Preheat oven to 180°c (fan)

  2. Lightly grease a baking tray or a large oven-safe dish

  3. Spread vegetables (and ham if using) on tray

  4. Whisk eggs + milk + salt/pepper + herbs, then pour over veggies

  5. Bake for 20-25 mins until set and slightly golden

  6. Let cool, then cut into squares of slices

Notes

Prep tip: keep portions in containers, reheat in microwave or oven. Great for several breakfasts or a light lunch
