Roasted Soy Maple Carrots

Ingredients

10 peeled carrots cut into chunks

1 onion cut into chunks

Season with Olive Oil, Garlic Powder, Salt, Pepper

2 ‘glugs’ of Maple Syrup

2 teaspoons Soy Sauce (I use Liquid Aminos or Coconut Aminos)

Directions

Toss everything together on a 1/2 sheet pan, roast at 300ºF for 1 hour, then raise the temp to 425ºF for 20 minutes until the edges are slightly crisp/brown.

If you’re serving this for a fancy dinner, I like to transfer to a pretty dish and add a sprinkle of pine nuts, feta cheese, or even some candied chopped pecans!
