Onion Bhaji Fried Chicken Sándwich

Ingredients

Marinade:

1/2 Cup Plain yogurt

1/4 C Buttermilk

1 Tbsp Garam masala

1/2 Tbsp Turmeric

1 inch knob of Ginger

5 Cloves Garlic

1 Tbsp Coriander

1 Tbsp Cumin

1 Tsp Salt

1/2 Lemon juice

4-6 Chicken thighs

1 Thin Sliced Red Onion

Dredge:

3/4 C Chickpea flour

3/4 C Flour

1 Tsp Salt

Green Chutney:

1 Bunch Cilantro

1 Lemon’s juice

1-3 Serrano chili’s

1 Inch Knob ofGinger

1 tsp Salt

1 tsp Cumin

2 Tbsp Oil

1 Tbsp Sugar

Other:

Vindaloo sauce

Sesame Seed Bun

Pickled red onion

Directions

In a bowl combine all ingredients for chicken marinade. Thoroughly mix chicken and red onions into the marinade and refrigerate overnight.

In a wide tray combine chickpea and AP flour and salt. Meanwhile preheat oil to 350F.

Remove chicken from marinade making sure to keep lots of onion stuck on the outside. Coat thoroughly in flour carefully keeping onions attached.

Place your chicken in the hot oil and cook until golden brown and 165 F internal. About 8-10 minutes.

To assemble begin by toasting your sesame bun in butter until golden brown.

To make Green Chutney Blend all ingredients thoroughly.

Spread green chutney, add fried chicken, spread vindaloo sauce on top of the chicken. Add pickled red onions and more green chutney on the top bun and crown your sandwich.
