Or baked potatoes (season with paprika, garlic salt, cumin powder, black pepper, salt)
Beef mince (lean) 500g
Mexican seasoning
Lite sour cream
Guac:
Red onion x1
Avocado medium x2 or extra large x1
Tomato x1
Coriander
Lemon juice
Other salad veg e.g. celery, leafy greens
Directions
Guac:
Grind 1/2 coriander, onion and salt with pestle until forms paste, then add guac, tomato, lemon juice and mix well.
Note: to prolong green colour, pour thin layer of water in airtight container - stays green for 2-3 days
1. Cook beef with mexican seasoning
2. Carb of choice: tortillas, corn chips, or baked potatoes. Serve with additional salad veg as desired
3. Serve with lite sour cream or greek yogurt
