Asparagus with Jalapeno Hollandaise Sauce

Ingredients

1 1/2 pound fresh asparagus or two packages, 10 ounces each, frozen asparagus spears

one package hollandaise sauce mix, 0.9 ounces

2 tablespoons grated parmesan cheese

1 tablespoon seeded and diced jalapeno pepper

2 teaspoons diced pimiento

fresh cilantro sprigs, lemon slices, red jalapeno pepper for garnish, optional

Directions

1 Snap off tough ends of asparagus. Arrange asparagus in steamer basket over boiling water. Cover and steam 5 to 6 minutes or until crisp tender. Arrange asparagus on a serving plate, and keep warm.

2 Prepare hollandaise sauce mix according to package directions; stir in Parmesan cheese, diced jalapeno pepper, and pimiento.

3. Serve over asparagus. Garnish, if desired. Makes six servings.
