3 large carrots

1 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp avocado oil

1 tsp lime juice

1 small garlic clove, finely grated or minced

toasted sesame seeds

Directions

Peel the carrots into long, thin ribbons using a vegetable peeler.

Whisk together soy sauce, rice vinegar, avocado oil, lime juice, and minced garlic.

Toss the dressing with the carrot ribbons.

Sprinkle with toasted sesame seeds. Let sit for 5–10 minutes to absorb the flavors, then serve.
