Rice Cake Tiramisu

5-Minute High-Protein Tiramisu
What you’ll need 👩🏻🍳
• 3 plain organic rice cakes
• 2 tsp instant mocha coffee or 1 cup brewed coffee (I used Elite coffee in mocha)
• 1 cup hot water (if using instant coffee)
• 1 tsp maple syrup
• 3/4 cup plain Greek yogurt
• 1 scoop vanilla protein powder
• 1 tsp cacao powder
• 1/2 tsp cinnamon
Make it:
• Prepare your coffee (mix instant coffee with hot water or brew your coffee). Stir in the maple syrup and let it cool slightly.
• In a small bowl, combine the Greek yogurt and protein powder. Mix until smooth and set aside.
• In another small bowl, mix together the cacao powder and cinnamon.
• Quickly dip one rice cake into the coffee for a few seconds per side—just enough to soak without making it soggy.
• Place it on a plate and spread a layer of the yogurt mixture on top.
• Lightly dust with the cacao-cinnamon mixture.
• Repeat with the remaining rice cakes, layering yogurt and cacao-cinnamon between each.
