Mav's Granola

Dry:
4 Cups Oats
1/2 Cup Pumpkin Seeds
1 Cup Almonds (chopped/slivered)
1 Cup Walnuts (chopped/slivered)
1/2 tsp Salt
Wet:
1 Cup Almond Butter
1/3 Cup Honey
1/3 Cup Maple Syrup
2 tsp Vanilla
2 egg whites
Directions
Preheat oven to 350F.
Toss the dry to combine.
In a seperate bowl, combine the nut butter, honey, maple syrup and vanilla to create a smooth paste.
In a seperate bowl, lightly whipp the egge whites seperatly to incoporate a little air.
Line a baking sheet with parchment paper. Carefully fold the wet ingredients into the dry until coated, then fold the egg whites until fully incorporated. Working quickly, spread the mix out into a thin layer on your baking sheet.
Bake for 20-30 minutes, stirring once halfway to ensure even browning.
When fully toasted, remove from the oven and allow to cool completely (to ensure a good crunch) before transfering to a container.
Notes
All of the above ingredients are in ratio to one another. These are the usual ingredients I use but it can easily scale up or down.
Also, most of the ingredients can be swapped like for like. I like maple and honey for taste and crunch but you can use whatever syurpy sweetener you like. Same for the nut butter or seeds/nuts. As long as you maintain the ratio you can use whatever flavors you fancy.
