Lemon Basil Burrata Pasta

Ingredients

10 oz radiatori pasta

2 tbsp butter

1 tbsp extra virgin olive oil

3 cloves garlic, finely grated

¼ cup finely diced onion

1 tsp fresh thyme, chopped

½ tsp red pepper flakes

Salt + black pepper

½ cup dry white wine

1 cup heavy cream

½–¾ cup freshly grated Parmesan

Zest + juice of 1 lemon

½–¾ cup reserved pasta water

1 ball burrata

¼ cup fresh basil, torn

Spicy Breadcrumbs (comment yum and I’ll dm you the recipe)

Directions

Salt water aggressively. Cook mezze rigatoni just shy of al dente. Reserve 1 cup pasta water.

Add garlic, thyme, red pepper flakes (30–60 sec). Deglaze.

Add ½ cup white wine and reduce by half Add 1 cup heavy cream and simmer gently.

Stir in Parmesan until smooth, and add lemon zest + juice.

Add pasta + splashes of pasta water toss until glossy and coated.

Finish with burrata, basil, spicy breadcrumbs, and enjoy!
