Pumpkin Bars (Paula Deen)

Bars:
4 lg eggs
1⅔ c sugar
1 c corn oil
1-16 oz can pumpkin
2 c all-purpose flour
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
1 tsp baking soda

Icing:
1- 8 oz cream cheese, softened
½ c (1 stick) butter softened
1 tsp pure vanilla extract
2 c sifted confectioners’ sugar
Directions
Preheat oven to 350°.
In bowl of an electric mixer, beat eggs, sugar, oil and pumpkin until fluffy.
Sift together flour, baking powder, cinnamon, salt, and baking soda in another bowl. Gradually add to the egg mixture with the mixer at low speed.
Spread batter in an ungreased 9 x 13 pan.
Bake to 30 – 35 mins or until the center of cake is done.
Remove from oven and cool completely.
For icing, cream together cream cheese and butter with an electric mixer; add vanilla.
Slowly beat in confectioners’ sugar until smooth.
Frost cake with icing and cut into squares.
These freeze well.
