4 boneless chicken breast or boneless theighs

2-3 Tbl olive oil

1-2 Tb minced garlic

½ to 1 cup chicken broth

1-2 tsp Italian seasonings (1part basil, 1 part thyme, 2 parts oregano)

½-1 cup parmesan cheese

Bag of baby spinach

½ cup sun dried tomatoes or 1 can petite diced tomatoes

8 or more oz of linguini or fettuccine

Direction

You can sear the chicken whole in EVO but I chunk the chick frying until golden brown. Add garlic and cook till fragrant.

Add heavy cream, chicken broth, Italian seasonings and grat Whisk cream mixture over medium heat until it starts to thick minutes. Add the tomatoes and spinach, simmer until spinar the chicken to sauce and toss to coat. Simmer chicken in sa cooked. Serve over pasta.

Notes

The original recipe serves 4 but as you can see I increase th more. I prefer diced tomatoes and juice to sun dried. If you you could add a touch of cayenne also. It's a great recipe to personalize!
