Smokey Chili

Ingredients

  • 2 Tbsp olive oil

  • 1 large chopped onion

  • 2 small chopped bell peppers

  • 1.5 lb ground beef 80/20

  • 1.5 lb spicy Italian sausage

  • 5 tbsp chili powder

  • 1 tbsp ground cumin

  • 1 tsp dried Basil

  • 1/2 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1 28oz can crushed tomatoes

  • 1 6oz can tomato paste

  • 1 3/4 cup low sodium chicken broth ( or 1 14.5 ounce can)

  • 1 12 ounce bottle of beer

  • 1 can kidney beans

  • 1 can black beans

  • 1 small can chipotles in adobo (chop it up)

  • 1 small can pickled jalapeños (chop them up)

  • cheese

  • Sour cream

  • salt and pepper

Directions

  1. heat oil in Dutch oven, add in onion and peppers until translucent (8 minutes)

  2. add in meat and break it up while browning (about 5 mins)

  3. add spices and stir for a couple minutes

  4. mix in tomatoes, tomato paste, beer, chicken broth, chipotles and jalapeños

  5. simmer until thickened (1 hr-1.5 hr)

  6. mix in beans

  7. Simmer for 5 more mins

  8. serve over rice if preferred with cheese and sour cream
