Chipotle Chicken Wrap with Creamy Chipotle Sauce

Ingredients

2 chicken breasts, cut into cubes

2 tbsp chipotle seasoning (or chili powder, cumin, smoked paprika, garlic powder)

Olive oil + lime juice

Salt to taste

Shredded romaine or iceberg lettuce

½ mango, diced

½ red bell pepper, diced

½ yellow bell pepper, diced

¼ red onion, diced

Shredded cheddar cheese

Large flour tortillas

Creamy Chipotle Sauce: mayo, sour cream, chipotle powder, lime juice, garlic powder, salt

Directions

Toss chicken cubes with chipotle seasoning, olive oil, lime juice, and salt. Marinate 15–30 min.

Make the chipotle sauce by mixing mayo, sour cream, chipotle powder, lime juice, garlic powder, and salt. Adjust heat to taste. Refrigerate until ready.

Cook chicken in a hot pan over medium-high heat until golden and cooked through, about 6–8 min.

Spread chipotle sauce over the tortilla. Layer with lettuce, chicken, mango, bell peppers, red onion, and shredded cheddar.

Roll tightly, slice in half, and serve immediately.
