Zanes Pork Fried Rice

3 cups cooked Jasmine rice (1 pouch)
6 teaspoons canola oil, divided use
3 eggs
1 large yellow onion, diced (cooked till translucent)
3 cloves garlic, crushed in a garlic press (or from a jar)
3 cups frozen peas and carrots (thawed)
12 ounces pork cut into 1/4-inch cubes (substitute chicken or beef)
2 teaspoons sugar
salt, to taste
ground white pepper, to taste
3 tablespoons Soy Sauce
Directions
Pre-cook the rice
Pre-mix the soy sauce, hoisin sauce, sugar, salt and pepper
Toss cooked rice with 2-teaspoon oil.
Ensure the wok is completely dry
Heat the wok and 4 teaspoons of oil on high heat.
As oil begins to smoke, add the eggs and scramble them.
Add rice and onion, stir-fry 2 minutes.
Add garlic, peas and meat, stir-fry 1 minute.
Add sauce to rice. Stir-fry for about 1 minute.
