Lentil Soup

Ingredients

red lentils

chopped onion

garlic

carrot

potatoes

ginger

tomato paste

fresh chillis

mint

paprika

water or stock

salt

chilli powder

pepper

lemon

brown rice optional

frozen spinach optional

Directions

Wash the red lentils and soak them.

In a pot, heat some oil and add chopped onion, garlic, and carrot.

Add cubed potatoes and ginger, then stir in the tomato paste.

Add the soaked lentils (and/or) brown rice to the pot.

Pour in 2½ cups of water or stock and add a teaspoon of salt.

Bring the mixture to a boil, then reduce the heat and cover.

Let it simmer for 15 to 20 minutes.

Add lemon juice at the end and blend if desired.
