Steak Bites with Onion Jus

Heavily inspired by my French dip baguettes from my new cookbook these steak bites with an onion jus and mash was to die for 😮💨. Less than 500 calories a portion too which is perfect if you’re on a weight loss journey! 😋

Ingredients (serves 2):
500g maris piper potato peeled and cubed
White onion sliced
Tsp chopped garlic
½ tsp dried thyme
½ tsp dried rosemary
250ml beef stock
1 x 250g steak (I used Rump)
Salt
Pepper
15g reduced fat butter
80ml semi-skimmed milk
Directions
Start by bringing the potatoes to boil in a large pan of water. Cook for 14-16 minutes until fork tender.
Meanwhile, in a saucepan, add the onion, chopped garlic, thyme and rosemary before pouring in the beef stock. Leave over medium to high heat.
When the potatoes are almost cooked, pat the steak dry and season with salt and pepper. Rub in thoroughly before transferring to a hot pan. Depending on your steak thickness, cook for 2 minutes each side for medium rare, cook longer if you prefer your steak well done. Remove from the pan and leave to rest.
Whilst the steak rests, drain the potatoes and season with salt and pepper generously. Add in the butter along with the milk and mash well.
Cut the steak into bites.
Serve the mashed potato with the steak bites on top.
Drizzle over the jus until the steak is covered and serve.
