Mom's Squash Casserole

3 cups fresh squash (1/2 yellow and 1/2 zucchini, chopped
1 or 2 medium onions, chopped
1 1/2 small packages Ritz crackers, crushed
1/2 cup melted butter
2 cups grated mild Cheddar cheese
3 eggs
1 cup milk
Salt and pepper, to taste
Directions
1. Preheat the oven to 400°F (200°C).
2. Cook the chopped squash and chopped onions together in a pot with a little water until they are tender.
3. Drain off all of the cooking liquid very well.
4. Mash the cooked squash and onions together.
5. In a separate bowl, beat the eggs.
6. Add the milk to the beaten eggs and mix well.
7. Stir the egg-and-milk mixture into the mashed squash and onions.
8. Season the squash mixture with salt and pepper to taste.
9. In another bowl, combine the grated Cheddar cheese, melted butter, and crushed Ritz crackers.
10. Stir about half of the cheese–butter–cracker mixture into the squash mixture.
11. Pour the squash mixture into a buttered casserole dish.
12. Sprinkle the remaining cheese–butter–cracker mixture evenly over the top of the casserole.
13. Bake the casserole at 400°F for 20–30 minutes, or until the top is golden brown and the center is set.
Notes
Use a combination of yellow squash and zucchini.
