Chicken Salad

Ingredients

2 rotisserie chicken breasts, pulled apart

1 Hass avocado, diced

2 tbsp finely chopped parsley

½ cup celery, chopped

½ cup onion (soak in water for 15 mins as you prep to soften its pungent flavor)

½ cup 0% Greek yogurt

2 tbsp Dijon mustard

1 tbsp honey

Salt + pepper to taste

A handful of dried cranberries

Smoked paprika (to taste)

1 tbsp apple cider vinegar

Directions

Pull and shred your chicken, add to a large bowl.

Add avocado, parsley, celery, and the softened onion.

Stir in Greek yogurt, Dijon, honey, salt, and pepper.

Fold in dried cranberries.

Sprinkle smoked paprika, then finish with apple cider vinegar and toss well.

Serve in romaine lettuce cups for a light, low-carb option or wrap it up for extra fuel.
