Sugar-Free Hot Chocolate (Low Calorie + Fat-Free)

2 tablespoon unsweetened cocoa powder (I use Hershey's)
2 tablespoon sugar-equivalent sweetener, to taste (I use 1 tablespoon Pyure Organic Stevia, which measures twice as sweet as sugar)
2 tablespoon nonfat dry milk powder
⅛ teaspoon vanilla extract
Pinch of salt
1 cup water
2 tablespoon unsweetened cocoa powder

Directions
SINGLE CUP INSTRUCTIONS:
Whisk together the cocoa powder, sweetener, dry milk powder, vanilla extract, salt, and water in a microwave-safe cup or bowl.
Microwave hot chocolate for about 1 minute or until it is piping hot. Stir until all powder is dissolved and fully blended.
Optionally, add mini marshmallows or other toppings (whipped cream, caramel sauce, crushed peppermints, etc)
Store powder in an airtight container in the pantry.
To make a cup, add 1 cup of hot water and ⅛ teaspoon of vanilla extract to a heaping ⅓ cup of hot chocolate mix.
Notes
*For each serving, you want to use sweetener equivalent to 2 tablespoons of regular sugar. I use 1 tablespoon of Pyure Organic Stevia (which is twice as sweet as sugar). If your sweetener measures 1:1 as sugar, you can use 2 tablespoons.
To make this completely sugar-free, eliminate the dry milk powder. However, it will not be as creamy without any milk.
You can substitute any type of milk instead of using water and dry milk powder. Unsweetened almond milk or coconut milk are good low-carb options for keto diets.
