Thai Green Noodle Soup

-1 tbsp sesame oil (I'm you're not supposed to fry with it but it was all I had so screw the rules)
-Large Thumb of grated ginger
-3 minced garlic cloves
-2 Lemon Grass Stalks
-3 heaped tbsp vegan Thai green curry paste (or replace with two whole Thai green chilis)
-Approx 500ml boiling water
-1 tbsp soy sauce
-1 tsp mirin
-400ml coconut milk
-160ml coconut cream
-4 Sliced spring onions
-Large bunch of finely shopped coriander
-Bok choy
-Rice noodles, broccoli, mongetout, bean sprouts, Thai green chilli, Thai basil, chilli oil and lime to serve
-Protein, such as meatballs
Directions
-Fry off ginger, garlic and lemongrass in sesame oil for a couple of minutes until fragrant
-Next add in Thai green curry paste and fry for a further few minutes
-Top up with boiling water, coconut milk and coconut cream and bring to the boil
-Add in meatballs to cook if desired
-Stir in the spring onions, bok choy/vegetables, and coriander just before serving up
-Serve up with noodles and steamed veg
