Check beans for small debris and rinse in cool, fresh water. Cover beans with 2 inches of water and soak for 4 to 6 hours (optional). In a large pot, sauté finely chopped onion, celery, carrot, and garlic or any combination you prefer) in olive oil until soft. Cook under pressure for 20 to 50 minutes, depending on the bean, then release pressure naturally. Cooking without the lid for another 20 or so minutes will help develop the broth.
